Ingredients: About 1 1/2 to 2 Cups of Cooked Rice 2 Eggs 2 Stalks of Spring Onions About 1/4 to 1/3 Cup of Char Siu or Ham (I used Cooked Ground Turkey) 1 or 2 Cloves of Garlic (to taste) Cooking Oil 2 Tbs of Soy Sauce (to taste) Salt and Pepper (to taste)
1) Wash and chop the onions, make sure to separate the white portions and green leaves. Chop the garlic as well.
2) Get a large non-stick pan and set it to a medium heat. Pour enough cooking oil to the pan to coat the bottom. Place the white portion of the onions and garlic into to pan and allow the onion and garlic to cook.
3) While the onion and garlic cooks, scramble your eggs in a bowl. Once the onion and garlic start to become slightly browned, lower the heat midway between low and medium, then pour in your eggs and rice.
4) Mix the eggs and rice thoroughly, so that each grain of rice becomes coated with the egg. Raise the heat back to medium once you're satisfied and add your salt and pepper. Mix well again.
5) Add the meat and green leaves of the onion into the pan and mix again. (If you enjoy diced carrots and peas in your fried rice, this would be an ideal time to add them).
6) Lastly, add the soy sauce and mix once more. Allow the fried rice to sit and mix periodically if you feel the egg hasn't cooked enough. Once you're satisfied, it's ready to eat!
